## Let yourself be at Improvável

  
Spacious, welcoming and irreverent, **Improvável Restaurant** is a space where art finds its way up the walls, vintage pieces find a place in glass showcases and where the expertise of Chef Rui Rosário reaches our tables.

 
In this room, with unusual collectibles, a snooker table, fireplace and piano, we offer a modern, careful and seasonal kitchen.

 
It is in tune with nature and the seasons that we harvest the best our farm's organic garden gives us and serve it according to tradition: prepared in loco and, by the Chef's words, served in good portions, with no kitchen tweezers.

 
When it comes to seasonings, our olive oil - **Imani Oil** -is carefully extracted from the farm's centuries-old organic olive grove, using the ancient technique that guarantees the highest extra virgin quality and which our guests can take home or buy [here](https://www.imani.pt/en/imani-oil).

 
At the table, there's room for traditional flavors but also for influences from all over the world, in order to let yourself linger for a while.

And because in Alentejo no meal is complete without a good wine, we suggest you try **Improviso**, the house's nectar which, in the words of our winemaker, Paulo Laureano, is both irreverent and consensual.

 
With a more refined note, and soon to be launched, you can't miss **Improvável**, which continues this happy partnership and promises to elevate the gastronomic experience that we invite you to taste.

At lunch we have a menu of snacks and light meals available, and at dinner we serve à la carte meals, upon booking on the same day, until 6pm. From April 15th to October 15th, on Mondays, we only serve the snack menu and the pasta menu throughout the day, exclusively for our guests. From October 15th to April 15th, this restriction extends to Mondays and Tuesdays.
